Biancolilla is one of Sicily’s oldest olive varieties—because when something is this good, it stands the test of time. Grown in the sun-drenched, rocky soil of Salemi, it produces an extra virgin olive oil packed with anti-oxidants, vibrant, and effortlessly rich. Spicy as soon as it’s picked, it smoothes out as the months go by, making it perfect for being used both as a condiment and for cooking.

This variety is delicate, low-yielding, and finicky to harvest, but when done right, the result is nothing short of exceptional.

Picked just before it turns from green to deep purple, Biancolilla olives are harvested and pressed within hours to lock in their purity.
